Recipe for Salad Dressings Part 1


Homemade salad dressings are the perfect finishing touch for your greens.

Strawberry Poppy Seed Dressing



8 ServingsPrep/Total Time: 10 min.

Ingredients

·         1/3 cup confectioners' sugar
·         1/4 cup Strawberry Orange Vinegar or raspberry vinegar
·         2 tablespoons orange juice
·         1/2 teaspoon onion powder
·         1/4 teaspoon salt
·         1/4 teaspoon ground ginger
·         1/3 cup canola oil
·         1/2 teaspoon poppy seeds

Directions

·         In a blender, combine the first six ingredients; cover and process
·         until blended. While processing, gradually add oil in a steady
·         stream. Stir in poppy seeds. Chill until serving. Yield: 1 cup.

Nutrition Facts: 2 tablespoons equals 108 calories, 9 g fat (1 g saturated fat), 0 cholesterol, 74 mg sodium, 6 g carbohydrate, trace fiber, trace protein. Diabetic Exchanges: 1-1/2 fat, 1/2 starch.

 Cranberry Orange Vinaigrette


10 ServingsPrep/Total Time: 10 min.

Ingredients

·         1/2 cup Cranberry Orange Vinegar(recipe also in Recipe Finder) or raspberry vinegar
·         1/4 cup maple syrup
·         1/2 teaspoon salt
·         1/2 teaspoon grated orange peel
·         1/2 teaspoon ground mustard
·         1/8 teaspoon coarsely ground pepper
·         1/2 cup canola oil
·         1/2 teaspoon poppy seeds

Directions

·         In a blender, combine the first six ingredients. Cover and process
·         for 1 minute. While processing, gradually add oil in a steady
·         stream. Stir in poppy seeds. Store in the refrigerator. Yield: 1-1/4
·         cups.

Buttermilk Salad Dressing


22 ServingsPrep: 10 min. + chilling

Ingredients

·         3/4 cup buttermilk
·         2 cups (16 ounces) 2% cottage cheese
·         1 envelope ranch salad dressing mix
·         Salad greens and vegetables of your choice

Directions

·         In a blender, combine the buttermilk, cottage cheese and salad
·         dressing mix; cover and process for 20 seconds or until smooth.
·          
·         Pour into a small pitcher or bowl. Cover and refrigerate for 1 hour.
·         Stir before serving with salad. Yield: 2-3/4 cups.

Nutrition Facts: 2 tablespoons (calculated without greens and vegetables) equals 23 calories, 1 g fat (0.55 g saturated fat), 3 mg cholesterol, 177 mg sodium, 2 g carbohydrate, 0 fiber, 3 g protein. Diabetic Exchanges: 1/2 fat-free milk.



Citrus Vinaigrette


4 ServingsPrep/Total Time: 5 min.

Ingredients

·         1/4 cup orange juice
·         3 tablespoons red wine vinegar
·         2 teaspoons honey
·         1-1/2 teaspoons Dijon mustard
·         1 tablespoon olive oil

Directions

·         Place all ingredients in a jar with a tight-fitting lid; shake well.
·         Chill until serving. Just before serving, shake dressing and drizzle
·         over salad. Yield: 1/2 cup.
